MANUFACTURING PROCESS OF BARLEY MALT
The main Raw Material for manufacturing of Barley Malt is BARLEY. Generally barley is classified into two varieties i.e. six row & two row. In India mostly Six Row Barley is grown.
There are five stages in the process of converting Barley into Barley Malt.
MALTING PROCESS:
STAGE 1: Incoming Barley after inspection & testing is subjected to screening & grading through various machines to remove dust, husk, stones, thin barley, cut grains & other impurities. The cleaned barley is stored into silos / bins.
STAGE 2: The cleaned barley from silo is subjected to steeping or socking into water or few hours. In this process grains attain a moisture level of 37-40%.
STAGE 3: After steeping the grains are transferred to Germination boxes & allow growing (germination) at certain temperature & humidity. During this process metabolic changes takes place & enzymes are produced in the grains. The germinated grains are called “GREEN MALT”.
STAGE 4: During this process, water is removed from green malt by blowing hot air into the grains to make it stable & storable without deterioration. In this process moisture level of Malt is bring down to 4-5%.
STAGE 5: After drying, the Malt needs to be cleaned & the root lets developed during the germination process is to be removed. The finish Malt is stored into bins & packed into bags OR dispatched as per buyer’s requirement.
